Day 29 and Orange Coconut Cauliflower Rice 

Sorry about the bad picture – bad nighttime lighting and taken with my phone. I’ve always been of the opinion that a bad workman always blames his tools.. but ah well! :) I did rush to take it because I didn’t start out with intentions of sharing this recipe but it turned out really good so felt like I should.

It’s great paired with baked dolphin and just-ripe avocado.

Orange Coconut Cauliflower Rice 

Adapted from the Whole30. Serves 2 with some leftover

1 head of orange cauliflower (white or any other variety will work just fine)

2 tbs coconut oil

1/3 onion, finely chopped

3/4 cups coconut milk

Juice of one orange (approx 1/4 cup)

1/4 cup of shredded coconut

Juice of  1/2 a lime

Remove the core and stalks from the cauliflower the separate or chop into florets. In small batches, pulse in the food processor until it resembles rice. Set aside.

Heat the coconut oil in a large pan on medium heat and add the onion. Cook until translucent, about 3 or 4 minutes.

Add the cauliflower rice, coconut milk and orange juice and mix thoroughly.

Cover and let simmer until the “rice” absorbs all the liquid; 10-15 minutes.

Remove from the heat and stir in the shredded coconut.

Squeeze the juice from the lime over the “rice” to serve.
