Day 17 and Toasted Butternut Squash Seeds

I forgot to tell you yesterday not to throw away your butternut squash seeds – oops! Hopefully you haven’t yet.
These are delicious on soups and salads, or just as a snack on their own. Instead of throwing them away, give them a quick toast in the oven. Unless, of course you’re going to grow your own butternut squash with them – in that case teach me how!

Toasted Butternut Squash Seeds
Remove seeds from a few, or a large butternut squash. Try to remove as much of the squash as you can and separate them a bit. Lay on a baking sheet lined with a non-stick sheet or parchment paper. Drizzle with olive oil, garlic powder, salt and pepper and roast @200C for 8-10mins
It doesn’t take long for these to burn so if you think they are near done, check on them after every minute, or better yet keep an eye on them.
Leave to cool then shovel them in your mouth use of transfer to an air tight container to store.
