I write this at my little desk, as I can feel a small sweatstache starting to form on my upper lip.. and it’s not even 9:00am yet.
If you’re in Barbados, you know that recently it has been unbearably hot. Yesterday being Saturday, we were without our luxurious AC offices and were really feeling the heat come lunchtime.
This crisp and cool salad was refreshing and delicious paired with smoked salmon, but you can pick the protein of your choice for a heat-free lunch or dinner.
Cabbage Slaw with Lemon-Sesame oil
Adapted from The Whole 30 by Melissa and Dallas Hartwig
2 cloves of garlic, minced
Juice of 1 lemon
1/8 cup extra-virgin olive oil
1/8 cup toasted sesame oil
1/3 of a head of purple cabbage, finely shredded
1/3 of a head of green cabbage, finely shredded
1 cup grated carrots
3 tablespoons of chopped cashews
Salt and pepper
2 tablespoons of chopped fresh basil
Whisk together the garlic and lemon juice in a small bowl. While whisking, slowly add the olive oil in a steady stream until fully blended, then repeat with the sesame oil. Set aside.
In a large bowl, combine the carrots, both sets of cabbage and cashews. Then toss with the lemon-sesame oil.
Season to taste with salt and pepper and top with the basil.
